Fish Cheese Puff Fish Cheese Puff
In this recipe, a cheesy puff pastry tops Alaskan Cod fillets and is baked until the fish is firm and flaky and the puff is light golden brown.
SERVES: 6
PREP TIME: 10 Minutes
COOK TIME: 30 Minutes
Ingredients

Cooking spray
2-1/4 pounds Alaskan Cod fillets (6 ounces each), skinless
1/2 cup sour cream
1/2 cup cheddar cheese, shredded
2 eggs, separated
2 tablespoons green olives, sliced
1 tablespoon onion, finely chopped
1/4 teaspoon salt

Directions
Step 1  Step 1:
Preheat oven to 350 degrees F. Spray 11 x 7-inch baking dish with nonstick vegetable cooking spray. Arrange fillets, slightly overlapping in dish. Set aside.
 
Step 2  Step 2:
Combine sour cream, cheese, egg yolks, olives, onion, and salt in a large mixing bowl. Set aside.
 
Step 3  Step 3:
Beat egg whites until stiff but not dry with an electric mixer at high speed in a medium mixing bowl. Fold egg whites into sour cream mixture. Spread mixture evenly over fillets. Place in oven.
 
Step 4  Step 4:
Bake for 25 to 30 minutes or until fish is firm and opaque and just begins to flake and puff is light golden brown.
 
Step 5  Step 5:
Serve fish with a side of steamed green beans and Caesar salad.
